Mediterranean Smashed Chickpeas

These savory chickpeas are flavored with garlic and lemon, and are excellent as a side dish, dip or snack!

Ingredients

  • 1 ½ cups cooked Chickpeas (246 g)
  • 2 Tbsp Olive Oil (30 g)
  • 2 cloves Garlic, minced (10 g)
  • 1 tsp Kosher Salt (6 g)
  • ¼ tsp Red Pepper Flakes
  • 2 tsp Lemon Juice (10 g)

Instructions

  1. In a bowl, combine chickpeas, olive oil, minced garlic, salt and red pepper flakes. Use a fork to mix together and lightly smash half of the chickpeas.
  2. Heat a medium pan over medium heat and add chickpeas. Cook 10 minutes, stirring occasionally, until golden brown.
  3. Return beans to the bowl and toss with lemon juice.
