Lemony Pearl Couscous with Broccoli and Salmon

Ingredients

  • 1 1/2 cups Traditional Pearl Couscous
  • 12 oz Broccoli Florets
  • 6 oz Salmon canned, skinless, boneless, no salt added
  • 3 Tbsp Capers drained
  • 2 Tbsp Olive Oil
  • 2 lemons (for the squeezed juice)
  • 1 Salt and Pepper to taste

Instructions

  1. Cook couscous according to package directions. Meanwhile, steam broccoli florets in the microwave by placing them in a microwave safe bowl with two tablespoons of water. Loosely cover with a lid. Cook on high for three minutes.
  2. When couscous is cooked, drain broccoli and add to the couscous. Add olive oil, lemon juice, capers, flaked salmon and salt and pepper to taste. Mix to combine. Enjoy hot or at room temperature.
