Homemade Crunchy Granola Bars

I decided to try my hand at making my own granola bars from scratch. Granola bars make the perfect snack in lunchboxes and as an after school snack. They were surprisingly easy to make too, so I know I’ll be making these granola bars again when these are gobbled cup. Recipe courtesy of Meghan Cooper from JaMonkey.

Ingredients

  1. Preheat oven at 350°F.
  2. Process 1/2 cup of oats in a food processor or a blender to create oat flour.
  3. In a bowl, combine oats, oat flour, baking soda and salt.
  4. Combine your coconut oil, brown sugar and honey in a microwave safe bowl. Microwave in 30-second increments or until the coconut oil is melted.
  5. Whisk the wet mixture together with the vanilla extract.
  6. Combine wet and dry ingredients together and mix well to make sure you coat all the oats.
  7. Line a small cookie sheet with parchment paper and spray a light coat of cooking spray on it and the bottom of a flat measuring cup.
  8. Pour your mixture into the prepared cookies sheet and use the back of the measuring cup to press the mixture down.
  9. Bake for 20 minutes. Cool on cooling rack for 10 minutes, then remove the bars from the pan using the parchment paper edges to lift it out.
  10. Cut the granola into bars then place the parchment paper back onto the cooling rack to continue to harden. Store in an airtight container.
  11. If desired, drizzle with melted chocolate.
