Gluten-Free Vegan Banana Bread

Ingredients

  • 2 cups Gluten Free All Purpose Baking Flour
  • 2 tsp Baking Powder
  • 2 tsp Baking Soda
  • 1 tsp Xanthan Gum
  • 1 tsp Ground Cinnamon
  • 1/2 cup Coconut Oil or Canola Oil
  • 1 cup Evaporated Cane Sugar
  • 2/3 cup Milk (Soy, Almond, Rice)
  • 1/2 cup Applesauce unsweetened
  • 1-1/2 cups Banana mashed
  • 1 Tbsp Vanilla Extract
  • 1 Tbsp Peanut Butter (or other nut butter)
  • 1/2 cup Walnut Halves , Pecans, Chocolate Chips and/or Raisins (optional)

Instructions

  1. Preheat oven to 350˚F. Grease 2 bread loaves and set aside.

    Blend together all dry ingredients. Blend in all wet ingredients one at a time, except the bananas, until smooth. Finally add bananas until well incorporated. Divide batter equally between the two pans. Bake 40 minutes, rotating pans after 20 minutes. Banana bread is done when toothpick comes out clean. Makes 2 loaves (13 slices each).
