This bread remains soft and pliable for over a week's time. Recipe was not tested in the Bob�s Red Mill Kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.

Ingredients

Dry Ingredients
  • 1-1/2 cups Tapioca Flour
  • 2-1/4 cups Brown Rice Flour
  • 1/2 cup Chopped Walnuts
  • 4 tsp Xanthan Gum (rounded)
  • 2 tsp Toasted Carob Powder
  • 2 tsp Active Dry Yeast
  • 1-1/2 tsp Sea Salt
Wet Ingredients
  • 1-5/8 cups Rice Milk
  • 1 cup Eggs beaten (or egg substitute)
  • 1 tsp Vanilla Extract
  • 1 tsp Apple Cider Vinegar
  • 1/4 cup Vegetable Oil
  • 2 Tbsp Honey

Instructions

Dry Ingredients
  1. In a medium bowl, whisk together the dry ingredients.

    In a separate bowl, whisk together the wet ingredients.

    In a programmable bread machine, eliminate the second kneading and second rising. Pour the wet ingredients first into the bread machine, followed by the dry ingredients. Set the baking time to 60 minutes. Makes 1 loaf.
