Warning: these Gluten Free Peanut Butter Sandwich Cookies are addictive! Very similar to those popular store-bought nutty, buttery sandwich cookies (which shall remain nameless). These cookies combine delicious wholesome oats and creamy luscious peanut butter. They're even better the next day when the filling has time to set the cookie and bring it all together, making them perfect for picnics or parties.

Preheat oven to 350°F. In a large bowl, cream together butter, peanut butter, granulated sugar and brown sugar. Add egg and vanilla; beat well.
In another bowl, combine the flour, baking soda, baking powder and salt. Add the dry ingredients to the creamed mixture and blend just until mixed well. Add oatmeal and stir.
Drop by tablespoons onto a parchment-lined baking sheet and press each mound down with a fork to form 1/4-inch thick cookies. Bake for 10-13 minutes, or until cookies are light brown. Cool on a rack.
Filling & Assembly
Cream 3 tablespoons butter with the powdered sugar and peanut butter. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.
