Gluten Free Calzone

Enjoy an Italian comfort food classic without the gluten with this delicious calzone! A chewy crust made with Gluten Free All-Purpose Baking Flour envelops the toppings of your choice; we filled this one with Italian sausage, sautéed peppers, sautéed onions and hummus.

Ingredients

Optional Fillings
  • 1 lb Cooked Meat, your choice
  • Sautéed Vegetables
  • Cheese
  • Hummus

Instructions

  1. Combine warm water, yeast and sugar. Stir well and set aside to proof. This will take about 5 minutes.
  2. While the yeast is proofing, combine flour, xanthan gum, salt and baking powder the bowl of a stand mixer. Whisk well to combine.
  3. When the yeast has foamed up, pour it into the flour mixture and mix well with a dough hook, until a dough forms. The dough will be soft and slightly sticky. Cover with plastic wrap and allow to rest in a draft free place for 1 ½–2 hours, or until doubled.
  4. Preheat the oven to 450°F. Using a large sheet pan facing horizontally to you as a guide, measure a piece of parchment paper double the height of the pan. Set the pan aside, leaving the parchment paper on the counter. Liberally sprinkle the paper with rice flour, placing a heavier amount on the part farthest from you. Lay dough on the flour and roll to the height of the paper.
  5. Place fillings on the side closest to you. Taking the parchment paper farthest from you, fold the dough over the filling. Brush the edges of the dough with water and fold them over to seal the dough. Brush the top of the dough with melted butter. Salt and pepper, the top if desired.
  6. Bake for 30–35 minutes, or until golden brown. Serve warm with pizza sauce on the side.
