French Lentil Soup

Ingredients

  • 1 cup diced Bacon (about 4 strips)
  • 2 cups diced Onion (about 1 large)
  • 1 cup diced Carrot (about 2)
  • ½ cup diced Celery (about 2)
  • 2 Tbsp Minced Garlic (about 4–6 cloves)
  • 2 cups Petite French Green Lentils sorted and rinsed
  • 1 ½ tsp dried Thyme
  • 1 tsp Salt
  • 1 Bay Leaf
  • 6 cups Chicken Broth

Instructions

  1. Heat a soup pot over medium heat. Add bacon and sauté about 5 minutes. Add onion, carrot, celery and garlic and cook until soft, another 5 minutes.
  2. Add lentils, spices, salt and chicken broth. Bring to a simmer and cook until the lentils are soft, 25–35 minutes. Remove bay leaf before serving.
