Preheat oven to 300°F and line a baking sheet with parchment paper.
In a small saucepan, heat coconut oil, pistachio butter, maple syrup, vanilla and cinnamon until the coconut oil is melted and the mixture is smooth and emulsified.
In a large bowl, combine all remaining dry ingredients. Pour the melted mixture over the dry ingredients and stir until fully coated.
Spread the mixture evenly on the prepared sheet tray.
Bake for 30–40 minutes, stirring every 10 minutes, until pistachios are toasted through and the mixture forms clusters.
Cool completely before stirring in chocolate chunks and cacao nibs.
