Crepes with Bananas and Chocolate

This is an easy gluten free crepe recipe using only brown rice flour (as flour). It can be filled with savory or sweet fillings as the crepe itself doesn't have any sugar added. This recipe was not tested by Bob's Red Mill. Gluten Free, Soy Free.

Ingredients

  • 1 cup Brown Rice Flour
  • 1 cup Milk any kind
  • 1 Egg
  • 1/4 tsp Salt
  • 1 Tbsp Unsalted Butter melted
  • 1/2 cup Chocolate Chips
  • 2 Bananas sliced

Instructions

  1. In a 2 cup measuring cup, mix together milk, flour, salt, egg, and melted butter. Set aside.
  2. Heat a skillet on medium heat. Meanwhile, put chocolate chips in a microwave safe bowl and cook on high for 1 minute.
  3. Cook crepes one by one by pouring a small amount of batter into the heated pan while tilting the pan around to distribute batter evenly to get a thin crepe. Cook until an edge comes up easily. Grab crepe with fingertips and flip over. Cook other side for 10 seconds. Remove crepe to a plate.
  4. While crepes are cooking, stir heated chocolate chips until they are melted.
  5. Assemble crepes by spreading some chocolate in the middle of crepes, topping with sliced bananas, rolling and topping with more chocolate. Optional: top with sprinkled powdered sugar.
