Ingredients

  • 4 Tbsp Coconut Oil
  • 1/2 tsp Salt
  • 3/4 cup Coconut Sugar
  • 1 tsp Vanilla
  • 2 Eggs
  • 1 3/4 cups Cassava Flour
  • 1/2 tsp Baking Soda
  • 1 cup Milk (for pancakes: increase to 2 cups)
  • 1 1/2 tsp Apple Cider Vinegar

Instructions

Waffles
  1. Preheat waffle iron to medium heat.
  2. Whisk together the first 4 ingredients in a large bowl, then add eggs once at a time. After eggs have been mixed in completely, add cassava and lightly mix the billowy flour in with the wet ingredients.
  3. Add baking soda, milk and vinegar and mix completely until no lumps remain. The batter will be rather thick. Use a cookie scooper or ladle to scoop about ½ cup of the batter into the greased waffle iron.
Pancakes
  1. Use 1 more cup milk and pour ¼-cup portions onto a greased griddle or pan on medium heat, flipping when the top of the pancake have begun to bubble, 2-3 minutes per side.
