Creamy and delicious organic carrot raisin muffins. Make a double batch! One isn't enough. This recipe was not tested by Bob's Red Mill. High Fiber, Low Fat, Organic.

Ingredients

  • 3/4 cup Organic High Fiber Hot Cereal
  • 3/4 cup Organic Brown Rice Flour
  • 1/2 cup Brown Sugar
  • 1 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 1/2 tsp Baking Soda
  • 1 Banana mashed (organic preferred)
  • 1/2 cup Sour Cream (organic preferred) *
  • 3 Tbsp Egg Whites
  • 3 Tbsp Applesauce (organic preferred)
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Carrots shredded (organice preferred, pre-shredded is easiest)
  • 1/2 cup Raisins

Instructions

  1. Mix together cereal, brown rice flour, brown sugar, baking powder, cinnamon and baking soda.
  2. In a separate bowl combine banana, sour cream, egg whites, applesauce and vanilla.
  3. Combine the two mixtures and stir until moistened. Fold in carrots and raisins.
  4. Lightly grease or line a muffin tin with paper cups. Fill each cup 2/3 full.
  5. Bake at 400°F for 18 - 20 minutes.



    Makes 12 muffins.
