Breakfast Oat Cookie

Need a quick breakfast, a fun snack, or a better-for-you dessert? This single-serve cookie checks every box (and yes, it’s totally delicious). Made with just one packet of our Whole Grain Instant Oats, it’s a hearty, whole grain treat that’s the perfect size when you want something homemade, nourishing and ready to go. Use any of our three flavors—Classic, Apple Cinnamon or Maple Brown Sugar—and add fruit, chocolate or nuts!

Ingredients

  • 1½ Tbsp Neutral Oil (like Canola, Vegetable, or melted Coconut Oil)
  • 1–2 Tbsp Brown Sugar, Maple Syrup, or Honey (adjust based on your sweetness preference and oat flavor)
  • 1 tsp Milk or Non-Dairy Milk
  • 1 packet Whole Grain Instant Oatmeal Packets (any flavor)
  • 2 Tbsp Gluten Free 1-to-1 Baking Flour
  • Pinch of Baking Soda (optional: leave out for a denser, chunkier cookie)
  • 2 tsp beaten Egg
  • Pinch of Salt
  • ⅛ tsp Vanilla Extract (optional)

Instructions

  1. Preheat oven to 350°F. Line a small baking sheet with parchment or lightly grease it.

  2. In a small bowl, combine oil, sweetener of choice, milk, beaten egg and oats. Stir in flour, baking soda (if using) and salt until everything is well incorporated.

  3. Shape the dough into a thick disc about 3 inches wide and place it on the baking sheet.

  4. Bake for about 15 minutes, or until the edges are lightly golden and the center looks set. Let cool before enjoying.

Variations
Maple Brown Sugar Instant Oats + Blueberries
  1. Add 2 Tbsp fresh or frozen blueberries.

Maple Brown Sugar Instant Oats + Dates & Pecans
  1. Stir in 1 Tbsp each chopped dates and toasted pecans for a cozy twist.

Classic Instant Oats + Chocolate Chip
  1. Use 2 Tbsp brown sugar and add 2 Tbsp mini chocolate chips.

Apple Cinnamon Instant Oatmeal Packet + Raisins
  1. Mix in 1 Tbsp each raisins and chopped walnuts.
