Preheat oven to 350°F. Line a small baking sheet with parchment or lightly grease it.
In a small bowl, combine oil, sweetener of choice, milk, beaten egg and oats. Stir in flour, baking soda (if using) and salt until everything is well incorporated.
Shape the dough into a thick disc about 3 inches wide and place it on the baking sheet.
Bake for about 15 minutes, or until the edges are lightly golden and the center looks set. Let cool before enjoying.
Add 2 Tbsp fresh or frozen blueberries.
Stir in 1 Tbsp each chopped dates and toasted pecans for a cozy twist.
Use 2 Tbsp brown sugar and add 2 Tbsp mini chocolate chips.
Mix in 1 Tbsp each raisins and chopped walnuts.
