Ingredients

  • 1 cup Steel Cut Oats or Organic Steel Cut Oats, cooked (follow package instructions)
  • 1/2 cup Milk
  • 1 Banana over-ripe and smashed
  • 1/4 cup Greek Yogurt Honey-Vanilla flavor
  • 2 Tbsp Vegetable Oil
  • 1 tsp Baking Soda
  • 2 tsp Baking Powder
  • 2 cups Unbleached White All-Purpose Flour
  • 1/4 tsp Salt
  • 2 Eggs
  • 1 tsp Ground Cinnamon
  • 1 tsp Orange's Zest
  • 1/2 to 3/4 cup Blueberries (or use chocolate chips, apple bits, chopped nuts, etc.)

Instructions

  1. In a bowl mix prepared oats, eggs, yogurt, milk, oil (yes, you can substitute 1/2 with applesauce) and banana.
  2. When blended, add flour, baking soda, baking powder, salt, cinnamon and orange zest.
  3. Pop in the fresh blueberries (or other mix-ins) just before cooking (to keep the dough from turning blue).
  4. Ladle individual dollups into lightly oiled fry pan over medium heat and cook until lightly browned on each side and fluffy...and serve.



    Serve plain or top with honey, water reduction syrup or toppings of your choice.



    Makes 4 servings.
