These delicacies were supposedly invented by the Danish way back in history. They are a waffle/pancake formed like a tennis ball. Serve these with apple slices, apple butter or applesauce.

Bob's Red Mill Buttermilk Pancake and Waffle Mix
1 cup
Water

Eggs

2 Tbsp
Unsalted Butter
melted + additional for pan
2 to 4 Tbsp
Powdered Sugar

Instructions
Separate yolks and white into two separate medium-size bowls.
Whisk yolks until thick and pale yellow. Whisk 2 Tbsp melted butter into yolks, then whisk in water. Add Bob's Red Mill Buttermilk Pancake Mix to yolks and whisk until smooth. Set aside.
In a separate bowl with a clean whisk, whisk whites until stiff but not dry. With a rubber spatula, mix a dollop of stiff egg whites into the yolk mixture to lighten the mix. Fold the remaining stiff whites into the yolk mixture.
Preheat aebleskiver pan according to the manufacturer instructions or over medium heat. Brush each aebleskiver cup with melted butter and fill each cup 3/4 full with batter. Cook until bubbly and set around the edges, about 1-1/2 minutes.
Turn over each aebleskiver using a fork or toothpick. Continue to cook on the second side until browned and a tester inserted into the center comes out clean, about 1 minute. Remove from aebleskiver pan and dust with powdered sugar to serve.
