Buttermilk Whole Wheat Pancakes

Pancakes that the whole family will enjoy! This flavorful pancake batter can even be made the night before for a quick breakfast in the morning.

Ingredients

  • 4 tsp Active Dry Yeast
  • 1/2 cup Warm Water
  • 2 Tbsp Honey
  • 2 Eggs large
  • 1 cup Buttermilk or Plain Yogurt
  • 1 cup Whole Wheat Pastry Flour
  • 2 Tbsp Vegetable Oil
  • 1/2 tsp Baking Soda

Instructions

  1. Soften yeast in warm water. Stir in honey and set aside for 5 minutes. Mixture should be slightly foamy and bubbly.
  2. Beat eggs and buttermilk or yogurt together and add yeast mixture. Add flour and oil. Do not add baking soda yet; it will be added right before cooking.
  3. Place batter in warm place for 20-30 minutes or until bubbly.
  4. Stir in baking soda.
  5. For each pancake, pour batter onto a hot, greased griddle. Cook until golden brown, turning the pancake when bubbles begin to appear on the surface.
  6. Serve immediately with desired syrup, honey or preserves.
