Soften yeast in warm water. Stir in honey and set aside for 5 minutes. Mixture should be slightly foamy and bubbly.
Beat eggs and buttermilk or yogurt together and add yeast mixture. Add flour and oil. Do not add baking soda yet; it will be added right before cooking.
Place batter in warm place for 20-30 minutes or until bubbly.
Stir in baking soda.
For each pancake, pour batter onto a hot, greased griddle. Cook until golden brown, turning the pancake when bubbles begin to appear on the surface.
Serve immediately with desired syrup, honey or preserves.
