Ingredients

Dry Ingredients
Wet Ingredients
  • 2 Eggs beaten
  • 1-1/2 cups Banana mashed & ripe
  • 1 cup Brown Sugar or Vanilla Sugar
  • 3 drops Vanilla Essence (or extract) if you aren't using vanilla sugar
  • 1/2 cup Oil
  • 1 Tbsp Golden Syrup (or clear Honey)
  • 1 cup Chopped Walnuts (optional)
  • 1 Dark High Cocoa Chocolate to drizzle over cooled cake

Instructions

Dry Ingredients
  1. Preheat oven to gas mark 5 (375°F). Grease and/or line a 1 pound loaf tin.
  2. Sift all the dry ingredients into a large mixing bowl. In a separate bowl or food processor blend all the wet ingredients. Add the wet mix to the dry mix, stir thoroughly and pour into prepared loaf tin.
Wet Ingredients
  1. Bake in the centre of the oven for approximately 1 hour 10 minutes. The cooking time can vary depending on the amount of banana used. Check after 40 minutes and cover the cake with foil or greaseproof paper to prevent the top from burning.
  2. Once cooled, melt the dark chocolate and drizzle in lines across the top of the cake. Makes a lovely snack at coffee time or can be served with a bit of fresh cream for a delicious dessert.
