Switch up your weekday breakfast routine with this easy Banana Almond Overnight Quinoa. Whip up a batch the night before and breakfast will be a breeze!

Instructions
Bring 2 cups of water to a boil in a medium size pot and add in the quinoa. Stir, add on the lid and cook over medium-low heat for 12 minutes or until tender.
Loosen the cooked quinoa with a fork and chill until cold.
Add the almond milk, yogurt, bananas and honey to a blender and puree until smooth. Set aside.
Evenly divide the chilled quinoa into three 2-cup Mason jars and add 1 1/2 tablespoons of chia seeds to each.
Stir in the banana-almond liquid until combined. Seal with the Mason jar lid and chill overnight.
