Ingredients

  • 1 ¼ cups Homestyle Buttermilk Pancake & Waffle Mix
  • ⅔ cup Water
  • 2 Tbsp warm Bacon Fat or Oil
  • 2 Tbsp finely chopped cooked Bacon
  • 3–6 slices cooked Bacon, kept warm
  • 3 Eggs, cooked over-easy (or to your liking)
  • 1 Tbsp chopped Chives
  • Maple Syrup
  • Freshly ground Black Pepper

Instructions

  1. Preheat waffle iron to medium heat for at least 10 minutes. Whisk together mix, water and bacon fat or oil in a bowl until mostly smooth. Follow waffle iron manufacturer's instructions for measuring and cooking waffles. 

  2. Stack waffles on a plate, layering with 1–2 slices of bacon between each waffle.

  3. Top each stack with a cooked egg, then garnish with chives, a drizzle of maple syrup and freshly ground black pepper.
