My wife made some Norwegian Flat Bread Crisp Crackers. The ingredients included Bobs Red Mill Organic Dark Rye Flour, sesame seeds, and Bobs Red Mill old fashioned Oats along with other ingredients. That are great plain, or with different cheese spreads and cheese.

I love rye bread, and I wanted to make sure I got a stone ground whole grain product. So many other rye flours look like they are whole grain because they have words like light, medium or dark rye when in fact they are not whole grain flours. I also ordered from the source so I wouldn't get stuck with a product that was sitting on some shelf for months and became rancid.

For making Nordic breads (I specifically do the Finnish ones like saaristolaisleipä), this is a great flour choice. Light rye is too light; pumpernickel meal is too "rugged." This flour makes quality traditional dark bread.

I like to make a Danish sourdough rye bread called rugbrød. I can get organically grown dark rye flour grown locally to me in Eugene, but it doesn't work very well. Bob's makes a superior rye flour for the purpose so it is worth paying the shipping charges for it.

I noticed your dark rye flour contains significantly more protein than some British brand (about 8%). Is it due to the different variety of rye used? Do you think your rye flour would produces a bread with a higher rise and should I notice anything else different other than the rise?

BEST ANSWER: Hi! Although I can't speak to other brands, our Organic Dark Rye Flour is milled from organic rye berries grown in Canada. The nutritional analysis reflects the most recent testing. Higher protein will result in a chewier crust and high gluten development.
