Quick and Easy Healthy Breakfasts

Breakfast is definitely the first meal to go when you’re running late or having a tough morning. It’s too early, too difficult, and sometimes a healthy breakfast seems to take too long to put together! Sometimes we find ourselves turning to the local donut shop or pouring sugary cereal just to calm our grumbling stomach. Thankfully, if you know what you’re looking for, healthy and easy breakfasts are never far away. We have provided a few examples to get you started, but we encourage you to try new combinations and create your favorite breakfast on the go!

Frittatas

If you’ve never heard of them, frittatas are basically a mix between an omelet and a quiche, and yes, they are as delicious as they sound. Frittatas pack all the deliciousness of a quiche, but without the crust. One extra bonus is that you can make them one day and just pop them in the microwave every morning for the rest of the week! We love to add some hearty veggies to get our day started right, but there’s no shame in adding a little bacon or cheese as well! Savory Toast

Quick and Easy Healthy Breakfasts _ Bob’s Red Mill Seriously, what is easier to make than toast? We can’t think of anything! But if you are tired of the typical toast + jam or toast + butter, then it’s time to mix it up a little! Our favorites include a spread of avocado and some prosciutto or an egg on top for added protein. You can even sprinkle with chia for an extra boost of nutrition. Basically, anything you have in your fridge will work on toast, all you need is some imagination! We recommend sticking with whole grain breads and not slathering on too much butter so you’re able to stay as healthy as possible—and if you are gluten free, feel free to try a slice of sweet potato in the toaster as your base! Overnight Oats

Overnight oats are the world’s gift to busy breakfasters everywhere! Instead of cooking your oats hot in the morning, you can mix rolled oats with all the “fixin’s” and leave them in the fridge overnight. They are a perfect snack for you to grab on the go and give you a boost of good energy to tackle the day ahead. At Bob’s Red Mill, we are known for our oats in many different varieties, from steel cut oats to Scottish oats. Of all the oat varieties we have, we believe our old fashioned rolled oats are perfect for creating delicious overnight oats. We love the sweet varieties, and dare you to mix it up and create your own custom flavor!

Parfaits

Another option for those who love a sweet but healthy breakfast is a yogurt parfait that you can make ahead of time and grab on the way out the door! As Shrek says, everybody loves parfaits, and we are no exception. These treats are typically fairly healthy, but taste like they shouldn’t be! We suggest you stick to fresh fruits and Greek yogurts, then add natural granola, nuts, or oats. Avoid too much additional sugar like honey, chocolate, or added flavorings. You can even grab a flavored Greek yogurt to complement the fruits in your parfaits! If you keep some healthy ingredients on hand, or if you just have some leftovers, you can throw them in a frittata or a jar of overnight oats on Monday, and keep eating well for the rest of the week. If you need something even faster, try an organic instant oatmeal cup for breakfast on-the-go. Or you can try one of our instant oatmeal packets if you don’t have space for the oatmeal cups. Most of these recipes also work as snacks during the day, so you can always have a tasty treat to look forward to!
