Here at the mill, we're very excited to introduce our latest gluten free, grain free baking flour: cassava flour! Created from the whole root of the cassava plant, cassava flour can be used to make tortillas, different bread types, brownies, and all kinds of gluten free baked goods, but it's also wonderful as a thickening agent for sauces or to bread meat and other proteins. You can even use it as an alternative to breadcrumbs in veggie burgers or meatballs! Its mild flavor and fine texture has been compared to wheat flour, but keep in mind itisa gluten free flour (unlike all-purpose flour) and not a one-to-one substitution like our Gluten Free 1-to-1 Baking Flour.

Tapioca flour is also made from cassava, with a key difference:to produce this flour, the whole cassava root is used, so it retains the fiber and provides a healthy source of carbohydrates. To produce tapioca flour starch,only the starch part is extracted and used.
