To make this Shepherd's pie as authentic as possible, lamb is cooked with herbs and vegetables, sprinkled with cheddar cheese and topped with a luscious layer of potatoes made from our potato flakes. Don't have any ground lamb in the freezer? Turn this Shepherd's pie into a cottage pie and use ground beef instead. This recipe makes 4-8 servings.Ingredients
Add water to a pot and heat to boiling. Then add butter and salt.
Remove from heat and add cold milk.
Add the potato flakes and stir gently. Allow 2-3 minutes to thicken. Set aside.
Preheat the oven to 400F.
Heat oil over medium heat in a deep 10-12-inch ovenproof skillet. Add onion, carrot and minced garlic and cook until soft. (5-7 minutes)
Add lamb and cook until browned. (3-5 minutes)
Mix in tomato paste and Worcestershire sauce and sprinkle flour over the mixture, stirring.
Add stock, thyme and peas. Cook until the stock begins to thicken. (when using frozen peas, allow the peas to defrost before use) Remove from heat and set aside.
Sprinkle cheese over the lamb mixture and top with prepared mashed potatoes. Run a fork through the mashed potatoes to create swirls and ridges for a traditional decorative finish.
Bake for 20-25 minutes until the liquids bubble around the edges and the top ridges of the potatoes begin to brown.
Allow the mixture to cool for 5 minutes before serving.
