Hello there and happy July! I hope youve been enjoying warmer days, sunshine, and pool days this month.Im in total summer mode. Give me all the sunglasses and tropical drinks a girl could ever want!Our summer has been so incredibly crazy already. Weve visited friends and family, we spend the day out on the town. We hop from grocery store to grocery store, soaking up the summer produce. And we always make sure to get outside and move as much as possible. Whether it's time in the pool, walking around our neighborhood, or doing a bit of cardio, we L O V E being outside.Summer is just the best, isnt it?But because were always so go-go-go, I need some nutritional goodness to keep me feeling my best. Hangrism is no joke, especially in the summer.Thats where pre-packaged gluten free protein bars or these cute Marbled Chocolate Peanut Butter Protein Bars come in!If youve never tried to make homemade protein bars, let me tell you one thing: its pretty much the easiest thing ever. If youve ever mixed something with a spoon, you can absolutely, 100% make your own protein bars!First off: Bobs Red Mill Almond Protein Powder, aka our protein of choice here today. I really love that it has two jobs here: its a protein powder and its an excellent source of fiber and calciumWe only need a handful of other ingredients to make these protein bars. Oat flour, peanut butter, and almond milk. Mix together, mush into a pan, done! If you want to add that really fun marbled effect to your protein protein bars, you can mix half of your batter with a bit of cocoa powder. You then mix your peanut butter batter and your cocoa batter together for a beautifully marbled treat! So pretty, right?I really loved the dark chocolate drizzle on top because it serves two purposes: its a bit bitter, so it helps tame the sweetness of the bars,and you can stick fun things to it like chia seeds and hemp hearts! I loved the addition of the crunch by way of these toppings, so I definitely suggest adding them to your homemade bars as well. Yum yum!I hope you give these bars a try, friends! Oh! Marbled Chocolate Peanut Butter Protein Bars (Vegan)
Mix peanut butter and almond milk together in a large bowl with a whisk. Add oat flour and protein powder, and mix until combined. The batter should be thick and cookie dough-like.Remove half of the batter into a smaller bowl and add your cocoa powder to it. Mix, and if youre having trouble incorporating it, add another tablespoon of almond milk. The mixture doesnt need to be totally 100% mixed together, were going for that marbled look anyway!Line an 8 x 8-inch square baking pan with parchment paper (leave a bit of an overhang), and add your peanut butter and chocolate batters to it. Press your mixture down, mixing the flavors together as you do. You really want to pack it in there, so I suggest using the back of a measuring cup to smoosh it all down and flatten it out. Place the baking pan in the fridge overnight, covered with plastic wrap or a lid. In the morning, remove your bars from the baking pan using the parchment paper overhang, and slice into 8 or 10 bars. Drizzle with melted chocolate and top with chia and/or hemp hearts if desired.
