Kid-Approved Summer Snacks

Kids are notoriously picky eaters, and it seems that summertime brings out the picky monsters in full force. Not only that, but summer seems to be made for grazing and snacking and it can be downright hard to keep up with the habit! If you strive to give your kids healthy snacks that are good for their bodies as well as their appetites, weve got you covered! We think youll be pleasantly surprised by how much your kids will love these kid-approved summer snacks.

Raspberry Chocolate Protein Popsicles

These raspberry chocolate protein popsicles are an excellent way to sneak a little action protein into your kids diet this summer. Plus, you get a healthy dose of probiotics and all the nutrient-rich antioxidant power of red raspberries. This recipe only calls for five ingredients in your blender, so it's super easy to make. Prep time is roughly 10 minutes, not including freeze time. Not only are these popsicles delicious and healthy, they are also dairy, soy, gluten and nut free. In short, it's a deliciously healthy vegan wonder treat. All you do to make these pops is blend frozen raspberries, bananas, full-fat coconut milk, vanilla extract and maple syrup together, and incorporate our chocolate protein powder nutritional booster until you have a smooth consistency. Taste the results and add more sweetener if necessary, then simply pour them into your popsicle molds and allow them to freeze. To easily unmold the popsicles, run warm water over the molds to help the popsicle slide right out when you're ready to serve them to your hungry children.

Hummus with Garbanzo Bean Flour

Hummus is an easy snack that most kids enjoy--half the fun is in the dipping! This recipe is made with a base of garbanzo bean flour, as well as vegetable broth, tahini and garlic cloves. Lemon juice, Tabasco sauce, ground cumin, plus salt and pepper will add seasoning and flavor. This recipe is also super simple to make, you just whisk your garbanzo bean flour with boiling water and let it cook for a few minutes. Add everything to your food processor and blend it all until smooth. If you find your mixture is too thick, just add more broth. This recipe is best if you let it sit for at least an hour at room temperature so that all the flavors mix and meld together. Then serve it up to your kids with crunchy veggies, crackers, pretzels or chips. You can also spread this hummus on little squares of baguette bread or baked pita!

Nacho Popcorn

Sometimes you just want to give your kids a quick and easy snack with an added dose of healthy whole grain fiber. This nacho popcorn is gluten free, soy free and vegan. You can use either white or yellow popcorn and pop it in coconut oil. Mix nutritional yeast and seasonings like salt, pepper, ground paprika, garlic powder, chili powder, ground cayenne, ground cumin and onion powder together. Sprinkle the spice mixture over your freshly popped popcorn and toss it well so that the kernels are thoroughly coated in the seasonings. If you prefer to use an air popper to pop your popcorn, then you can drizzle coconut oil over your air popped popcorn and then toss with your seasoning and spices. We guarantee your kids will love this snack because it is loaded with flavor. In fact, it's so good they won't even realize it's actually healthy.

Fruit, Granola and Yogurt Parfait

Kid-Approved Summer Snacks _ Bobs Red Mill This easy recipe only takes about 30 minutes of prep time and is great for a snack as well as a light breakfast or brunch. It starts with a base of yogurt (you can use your yogurt of choice, although we recommend vanilla yogurt), as well as cream cheese. Honey and ground cinnamon add sweetness and spice, while fruits like oranges, bananas, kiwis and frozen blueberries add all the yummy and nutritional goodness. Crunchy coconut granola brings the texture with a punch of fiber. You can also try different granola flavors, if you want to mix it up a bit. To make this concoction, combine your cream cheese, yogurt, cinnamon and honey, and then chill for 30 minutes. While its chilling, slice and dice your fruit and mix it all together. Divide the fruit mixture between your parfait glasses. Top each glass of fruit with equal parts cream cheese mixture and granola, then repeat, making layers. Add the remaining third of fruit to the tops of each glass of parfait and serve. These cups are so good they won't be just a snack for the kids, but a snack for mom and dad as well!
