Our blogger spotlight today is on foodie influencer Jenny. Jenny is a self-proclaimed lefty that still manages to use her right hand on the regular. Which seems fitting for a person whos both creative and analytical. Shes not a singer or a dancer, but boy, can she cook! Shes written and co-written two cookbooks chock full of all the yums that are perfect for those trying to follow a Paleo way-of-eating. Dont just take our word for it though, you can see for yourself. She wrote and released One-Pot Paleo as her first foray into book publishing, and then co-wrote and released Ultimate Paleo with some of her fellow foodie bloggers not long after. Both cookbooks are loaded with delicious, gluten free recipes guaranteed to spice up the menu of any household trying to eat better, without making compromises on taste, ingredients or quality. The best part is that she blogs all of her delicious food creations and regularly inspires the rest of us with every mouthwatering recipe and photo.

How did you become an influencer/blogger?

I started posting my food photos on Instagram back in 2013 and casually shared my recipes with family and friends on my old paleo blog (paleofoodiekitchen.com). My number of followers grew immediately and within a year, I had a lot of followers who made my recipes and loved them. I also signed a book deal in mid-2014 and released my first book, One-Pot Paleo, in May 2015.

What started your journey into health?

I have been plagued with debilitating migraines all my life. Sometimes I would get them almost every week and I always had to take time off from work. I heard about Paleo at the gym I was working out in, in 2013, and decided to give it a try. A year later, not only do I get less migraines, I've also felt more energized and alert from eating whole, nutrient-dense foods.

Do you follow a modified diet?

I have been eating strictly gluten free and will sometimes eat Paleo or Keto depending on the food that I'm experimenting with.

What is something most people don't know about you?

That I work a full time day job in IT while running two businesses on the side; my blog (cookandsavor.com) and my safer-skincare business (jennysbeautycounter.com).

What is your favorite BRM product?

Hands down, the Gluten Free Chocolate Chip Mix! It's a no-brainer to make and you seriously can't tell its gluten free!

One tip for finding time to cook and bake amidst a busy schedule?

Meal prep on the weekends! Since I work full-time and have my own businesses, I'm pretty tired when I get home during the week. So, meal prepping on Sundays has helped me stock our fridge with healthy food. I share my weekly meal prep on Instagram stories every Sunday :)

Oats person or smoothie person?

Definitely oats! I love the nuttiness of oats and enjoy chewing my food vs drinking it.

Any exciting announcements or plans for your Instagram or blog this year?

There is, but it's on the downlow for now ;) More details coming in late Spring of 2019. Here's a clue: It's all about meal prepping!

What do you like to do when you aren't working on recipe creation?

Reply to DM's on IG and interact with those who love to meal prep as much as I do. I also like to share about safer-skincare and how harmful chemicals in our everyday products and makeup are harmful to our bodies and the environment.

Favorite season or holiday?

Season I love spring. Cool, sunny weather, lots of flowers, and summer is just right around the corner! Holiday is definitely Christmas :)

What is your top baking tip?

Creative. Organized. Multi-tasker.

Quinoa or rice?

Rice all the way! I am Filipino so it's in my DNA.

Favorite food brands?

Siete Foods for their amazing gluten free tortillas. Trader Joe's for their affordable brand and products, this is where I shop 90% of the time. Kasandrinos for the best olive oil money can buy, and Balanced Bites for spices that help make meal prepping so much easier.
