These Gluten Free Oatmeal Cookie Dough Bites are a delicious combination of your favorite wholesome cookie in a delectable bite form. My kids love these because not only are they tasty, but they are easy to take with them when they head to class. This makes me happy because it means they aren't grabbing junk food for nourishment to keep them going throughout the day.

Gluten Free Oatmeal Cookie Dough Bites
Makes about 10
1/4 cup
Cassava Flour
1/4 cup
Gluten Free Organic Rolled Oats
1/4 cup
Vanilla Booster
1/4 cup Raisins
3 TBSP Sugar
1/4 tsp Baking Powder
1 Egg or 1 TBSP
Egg Replacer mixed with 2 TBSP Water
1/4 tsp salt
1/4 tsp Pumpkin Pie Spice
2 TBSP Milk or Creamer of your choice
Preheat oven to 350
Combine all the ingredients in a food processor and blend until combined. Scoop about 2 TBSP worth on a parchment lined baking sheet. No need to put too much space between them since they don't spread. Place in the freezer for at least 1 hour or overnight. Bake 10-12 minutes or until lightly browned. Cool on a wire rack.
