Gluten Free Gingerbread Cookie Dough Bites

Well friends, cookie season has arrived! Hopefully the stress of the season hasnt hit yet. Never fear, though . . . I have a quick, easy, and delicious treat for you to whip up so you dont have to spend forever in the kitchen while everyone else is enjoying time together. This is time to spend with friends and family, not slaving in the kitchen. These Gingerbread Cookie Dough Bites are perfectly doughy on the inside with a crispy sugary coating on the outside. They are a great accompaniment to your holiday party menu and also make great gifts, as well. A little tip from me to you, double this and freeze half of the dough. Trust me, youll be thanking me later. Happy holidays!

Gluten Free Gingerbread Cookie Dough Bites

Makes 37
  • 1 1/2 cup Gluten Free 1-to-1 Flour
  • 1 tsp Cinnamon
  • 3/4 tsp Ground Ginger
  • 1/2 tsp Salt
  • 1/4 tsp Baking Powder
  • 2 TbspBobs Red Mill Egg Replacer, prepared according to package directions
  • 5 Tbsp Dark Brown Sugar
  • 2 Tbsp Molasses
  • 1/2 cup Milk
  • 1/2 cup Sugar
  • 1 tsp Cinnamon
In a mixing bowl, combine the flour through baking powder and set aside. Next add the egg replacer through milk to the dry ingredients and mix until combined. Scoop the mixture onto a parchment lined baking sheet with a small cookie scoop (about a tablespoon and a half). Roll the balls so they are tall (not flat). In a separate bowl, mix the sugar and cinnamon. Now roll the balls in the sugar mixture and place on the pan and freeze for 30 minutes or refrigerate for 2-3 hours. Bake in a preheated oven at 350F for 10-14 minutes or until they are slightly browned on the bottom. Remove from pan and cool.
