protein powder and oats. In my book, that makes the perfect treat.

My youngest has recently become obsessed with crunchy peanut butter. So, I took our favorite Peanut Butter Protein Cookie recipe and added a chocolate spin with super crunchy peanut butter. MMMM! These Chocolate Peanut Butter Protein Cookies are dense and chewy on the inside with a crunchy texture on the outside. If you want an extra special treat, make a sandwich cookie with a schmear of crunchy peanut butter between two cookies.

Did I mention they are also gluten and dairy free?! Exciting right? Easy, delicious, nutritious snack time perfection!
Chocolate Peanut Butter Protein Cookies

- 2 Scoops Bobs Red Mill Chocolate Protein Powder Nutritional Booster (45 g)
- 1/3 cup Gluten Free Quick Rolled Oats (30 g)
- 1/3 cup Brown Sugar (68 g)***
- 1 tsp Baking Soda
- 1 cup Crunchy Peanut Butter (272 g)
- 2 Large Eggs
- 2 TBSP cup Chocolate Stevia Syrup***
Preheat oven to 350F. Line a baking sheet with parchment paper.
In a large mixing bowl, combine the protein powder, oats, brown sugar and baking soda. Mix well. Next add the peanut butter, eggs and chocolate syrup to the oat mixture. Mix until just combined.
Using a tablespoon or small cookie scoop, place the dough 2 inches apart on the baking sheet. Bake for 10 to 12 minutes or until cookies are slightly browned. Allow to cool for 5 minutes on the baking sheet. Transfer to a rack to continue to cool.
***Notes:
If you want to use more brown sugar and not use the chocolate syrup that works well by using cup brown sugar.
