This carrot cake-baked oatmeal is an excellent way to turn a good bowl of oats into a great one. We've combined our famous Carrot Cake Recipe with Bob's Red Mill Old Fashioned Rolled Oats to create a breakfast so good it can double as a dessert. Ready to try it out for yourself?   1. Grease a 99" baking dish and preheat the oven to 350F.
  2. Whisk eggs, almond butter, milk and vanilla extract together in a large bowl.
  3. Add oats, cinnamon, ginger, salt and coconut sugar and stir.
  4. Add shredded carrot, chopped, nuts, and raisins and stir everything together until thoroughly combined.
  5. Pour mixture into a greased baking dish and smooth the top.
  6. Bake for 30-35 minutes until the oatmeal is golden brown.
  7. As the oatmeal cooks, add cream cheese to a medium-sized bowl.
  8. Using a hand mixer, beat the cream cheese until smooth.
  9. Beat in powdered sugar and two tablespoons of milk.
  10. Add oatmeal to a bowl and drizzle the cream cheese icing over the top.
  11. Serve warm and enjoy.
