Multi use
I use this for every day cooking instead of flour. I've made biscuits, cakes, dumplings, cookies, pizza crust with yeast, and pie crusts. I do add the Xanthium gum most of the time. I do buy the mixes but I find this is what I use more than anything else so I buy it in the 25 pound bag on line. It is so much cheaper that way than buying the small packages at the grocery.

best gf flour blend for breads, pancakes, and pie crust
Hands down best off-the-shelf gf blend for breads, pancakes, and pie crusts of all kinds. Makes a killer vegan chocolate cake if you like thicker/denser cake with a more dark chocolate/bitter appeal. Replaces just like 1:1 without the heavy cake consistency of the actual 1:1 Baking. Keep in mind these are not self-rising flours. If a recipe calls for self-rising, you need to add ingredients to support this. Google how to turn any flour into self-rising flour.

I love the course oat for all my uses. I make oat flour to cereal. I undercook my oats just until tender so the consistency is retained.
Great old fashion oats, for all uses.

Weird Taste
I definitely would not recommend this product. My friend couldn't find the 1 to 1 baking mix and got this one for me to use in a pumpkin loaf recipe that I love. I tried it twice even altering the proportions of the spices, but it left such a funny/weird taste. I finally looked at the ingredients and noticed beans that I'm unfamiliar with, so I don't know if that is the cause. Regardless, I was really disappointed with this one.

Great flour for cookies
Great flour for cookies among other things.

Yes, there is a weird taste before it gets baked (makes eating the dough less fun) but is very solid once baked.

This is great AP GF flour and we always keep a bag around the house.

gluten free flour that also has protein and fiber. Kids prefer the pizza and pancake blend but those are more 'white' and 'sweet' flour blends with less nutrient density.

what is recipe pancakes with gluten free all purpose baking flour?
jean b on Dec 9, 2017
BEST ANSWER: Hello Jean, I have not used the All Purpose Baking Flour for pancakes. I use a combination of other gluten-free flours. One thing I would like to share with you is - people that use gluten-free flours agree that the results is not always the same. You can be very careful measuring but there is still other factors that must be playing into a good result. I have problems with the rice flour that is used a lot in mixes so I make my own. I use Tapioca Flour, Potato Flour, Sorghum Flour and Baking Powder as my base ingredients for waffles. Depending on what I have on hand I'll add other flours Masa, Buckwheat, Coconut, Almond, Oat. Coconut and Almond are challenging. For liquid I mix 2 eggs and oil add some milk or water or banana . Then add the dry ingredients. I have the All Purpose and have used it, honestly at the moment I can't think what for but I must like it because I still have it in the pantry.

Muffins and Quick Breads: ¾ teaspoon per cup. Breads: 1 to 1-½ tsp. per cup. Pizza Dough: 2 teaspoons per cup.

My flour expired in August and I am in a pinch and need flour now. Would it still be good in December?
A shopper on Dec 24, 2017
BEST ANSWER: Depends on how the flour was stored...freezer and unopened? Should be fine.
Opened and left in a pantry? Could still be okay, if stored in an airtight container. Best way to know, is to open the package and sniff and taste it. Smells ok? Use it. Smell likes your kitchen ? Toss it.

Is it soy free and nut free if manufactured in a facility that uses tree nuts and soy?
A shopper on Nov 11, 2017
BEST ANSWER: This product is produced in a facility that also processes soy and tree nuts. It does not contain these things, however, if you have a concern with cross contamination we do not recommend this product. We clean our machinery thoroughly with high-pressure air and vacuums between each production run, as well as discard or donate the first 15-20 pounds of product per lot before we begin the packaging process. Despite these precautions, we are unable to guarantee that cross-contact has not occurred because of airborne and proximity issues because our products run on shared production lines. And we only test for the presence of gluten (not traces of nuts, etc.) in items that are produced in our Gluten Free Facility.
