Oatmeal Baked Apples

MMMMmmmm! Just imagine warm baked apples filled with wholesome delicious oatmeal and dried fruit topped with a luscious sweet sauce. These Oatmeal Baked Apples are the perfect cold weather treat. Feel free to top these beauties with a little vanilla ice cream to make them extra special.

Oatmeal Baked Apples

Prep time: 15 minutes | Cook time: 45-50 minutes
  • 4 medium sized apples (Honey Crisp, Fuji, Jazz all work well)
  • 1 cup Bob’s Red Mill Gluten Free Old Fashioned Rolled Oats
  • 3/4 cup dried Cranberries
  • 1/4 Brown Sugar
  • 1/2 cup melted Butter (for filling)
  • 1/3 cup Maple Syrup
  • 1 tsp Cinnamon
  • 1/4 tsp Salt
  • 4 Tbsp Butter (for topping)
  • 1/2 cup Water (for pan)
Preheat oven to 375°F. Core the apples with an apple corer. Using a teaspoon, scoop out the top half of the apple to create a well down the center of the apple. (Note: Don’t scoop out the bottom inch of the apple, you want to leave that in place so the apple holds it shape as it bakes) In a mixing bowl, add all the ingredients and stir together to fully coat. Spoon the oatmeal filling into each of the apples, gently packing as you do, then place the apples in a 9 x 9-inch baking dish. (If you have any extra leftover filling, add it into the bottom of the baking dish around the apples so it can become party of the tasty syrup that will develop while the apples bake!) Dollop the top of each apple with a pat of butter, add the water into the baking dish, then loosely tent the tray with a piece of tin foil (so as not to disturb the butter on top of the apples). Bake the apples for 30-40 minutes. (The apples will look wrinkled, and be softened when ready). Serve immediately with vanilla ice cream or whipped cream, and be sure to spoon the syrup that developed at the bottom of the baking pan over each of the apples when serving.

    Is it 1/3 CUP maple syrup? The recipe just says 1/3.
