- 4 Eggs separated, at room temperature
- 2 Tbsp Lemon Zest packed
- 120 g Granulated Sugar divided 50g and 70g
- 3 g Almond Extract
- 5 g Vanilla Extract
- 2 g Ground Cinnamon
- 150 g Almond Flour
- 1 tsp Baking Powder
- 3 g white vinegar
- Pinch of Salt
- Powdered sugar for sprinkling
Step 1: Choose Quality Flour
When making almond cake, you must use quality almond flour. The flour that you choose will affect both the consistency and flavor of your baked treat, making it a cake that's irresistible. Step 2: Prepare
Now that you have chosen the right almond flour to create a cake, it's time to prepare the rest of the ingredients needed. First, review the list of ingredients, utensils and appliances featured in the recipe to make sure that you have everything required to make your cake successful.
Step 3: Preheat the Oven
Allowing your oven to reach the correct temperature is one of the most critical steps in creating a well-baked almond cake. Before assembling the ingredients, take time to preheat the oven to 350°F (175 °C). Next, prepare a Bundt pan with cooking spray. For smaller, individual cakes, use a mini Bundt pan.
Step 4 : Mix the Wet Ingredients
Gather the ingredients of your cake together and begin mixing. Start by beating the egg yolks with lemon zest and 50 grams of sugar into a large bowl. Once the mixture is smooth, add almond extract, vanilla and cinnamon to it and mix it thoroughly.
Step 5: Prepare the Dry Ingredients
After the wet ingredients are thoroughly mixed, it's time to focus on the dry. Begin by whisking the almond flour and baking powder together. Then combine the flour mixture with the egg yolk mixture and beat until smooth.
Step 6: Shaping
Next, with an electric mixer and a clean bowl, whip the egg whites into soft peaks. To do this, use the hand mixer to beat the egg whites until bubbles begin to form. Once they do, add a pinch of salt and a teaspoon of vinegar—this will help the egg whites increase in volume. Now, slowly sprinkle in the remaining 70g of sugar a little at a time, all while continuing to beat the egg whites. Stop once soft peaks have formed.
Step 7: Mix
Take the freshly beaten egg whites and begin to fold them into the almond mixture a large spoonful at a time. This will add texture to your batter, making it more light and airy.
Step 8: Bake
Spoon the light batter into the prepared Bundt pan and bake at 350°F (175 °C) for 35 minutes. When using a large Bundt pan, check the cake after it has baked for 35 minutes. If it has not finished baking, increase the baking time in increments of 5 minutes as needed. Once the cake is thoroughly baked, you will notice that the sides of the cake pull slightly away from the pan, and a toothpick can be inserted into the center and removed without and cake batter clinging to it.
Step 9: Cool
Lastly, allow the cake to cool thoroughly and sprinkle a little powdered sugar atop it before serving.
