Pumpkin Quinoa Pudding...need I say more?! Ok, pumpkin lovers, are you out there? Who else is celebrating pumpkin season..I mean fall? Let's talk about this Pumpkin Quinoa Pudding, shall we? Healthy, delicious, creamy, slightly sweet, full of pumpkin spicy goodness, topped with cool vanilla yogurt and crunchy honey oat granola. Do I have your attention yet? This irresistible deliciousness is perfect on so many levels. I have spoken about the health benefits of quinoa, protein and probiotics, along with the added benefits of the omega-3 fatty acids in the Bob's Red Mill protein powder. I then decided it would be perfect to put all of these amazing ingredients together for a delicious fall treat. I based this on my recipe forChocolate Quinoa Pudding. I love how well these ingredients all worked together. It's like a dessert, breakfast and snack all mixed in one. Grab a spoon friends and dig in to this healthy fall treat. I promise you won't be disappointed!  

Quinoa Chocolate Pudding

Makes 2 2/3 cups
  • 1 cup Water
  • 1/2 cup Quinoa
  • 1 cup Canned Pumpkin
  • 2/3 cup Vanilla Protein Powder
  • 1/2 cup Vanilla Milk of your choice
  • 3/4 tsp Pumpkin Pie Spice
Cook the quinoa according to package directions. Combine all the ingredients in a food processor and blend until pureed. Chill for a least 1 hour. Serve cold with a dollop of vanilla yogurt and granola.
