Its no secret the holiday season is coming, and with that comes indulgent treat season. I feel like fighting it is futile. So instead of feeling guilty about having treats around all the time, I like to incorporate some healthier treats too. That way, we can join in on the treat feasting fun without worrying that we are giving up all of our healthier habits during the holiday season. Dont get me wrong, we have our fair share of super indulgent treats. These are just part of the goodie rotation I bake during the holidays.

I know I mentioned this before, but I really do love the new pea-based protein powder line from Bobs Red Mill. There are so many flavors too, which makes them perfect for adding to recipes when you want to add a little extra flavor and
high protein. The chocolate, chai, and vanilla all work really well in this recipe. These protein peanut butter cookies are dense and chewy on the inside with a crispy crunchy exterior.I will warn you though before you make them, they go fast. Its a good thing they are easy to make. I hope you all enjoy these as much as we do!
Peanut Butter Protein Cookies
Gluten free, dairy free, soy free
Makes about 23 cookies
Preheat oven to 350F. Line a baking sheet with parchment paper.
In a large mixing bowl, combine the protein powder, oats, baking soda, and brown sugar. Mix well. Next add the peanut butter, eggs, and vanilla to the oat mixture. Mix until just combined. Add the chocolate chips to the dough and mix to evenly distribute.
Using a tablespoon or small cookie scoop, place the dough 2 inches apart on the baking sheet. Bake for 10 to 12 minutes or until cookies are slightly browned. Allow to cool for 5 minutes on the baking sheet. Transfer to a rack to continue to cool.
