Its no secret that Im a health nut. Im also all about making things easy. Sometimes those two things dont go hand in hand. I know, it would be so much simpler to go to the store to grab a jar of jam than to make it yourself. Not so fast! Ive got a recipe for you today that takes no time at all to whip up, its not loaded with tons of added sugar, its actually good for you, and its perfectly delicious spread on your favorite breads.
Chia seeds are so magical. I love that they can be used as an egg replacer in baked goods, as a seed in cookies, mixed with smoothies to make them thicker, and my personal favorite is in my oatmeal every morning. Putting these super food seeds to this Orange Fig Chia Jam not only created a beautifully thick, rich spread, but also added fiber and omega-3s to the good stuff. The dried figs add so many good things too! You get a good dose of fiber, vitamin K, potassium, magnesium, and iron from these sweet jewels of nature. The oranges complement the flavor of the figs and add even more good things, like fiber, vitamin C, and potassium. Could you ask for more from your fruit spreads? I really dont think so. I wish I could take credit for coming up with chia jam because its pure genius. While I cant take credit for the idea, I will take credit for this incredibly delicious combination of flavors. This Orange Fig Chia Jam is such a celebration of vibrant flavors. I hope you like this one as much as we do!
Makes about a cup
Soak the figs in hot water for 10 minutes. In a high speed blender, blend the soaked figs, orange, and stevia until completely blended. Mix the chia seeds into the fruit mixture by hand and place in the refrigerator overnight to set up.
