Butterscotch Oatmeal Cookies
To take butterscotch cookies to the next level, we combined sweet butterscotch chips with chewy oatmeal, creating a mouthwatering combination that you won't be able to get enough of. When baking traditional oatmeal cookies, we've noticed that some recipes produce cookies that taste great fresh but then get tough and crunchy the next day. While there's a time and a place for crunchy cookies, we didn't want these Butterscotch Oatmeal Cookies to follow the same path. So instead, we combined ingredients like all-purpose flour, old-fashioned rolled oats, butterscotch chips and butter to ensure that they remain chewy, no matter when you decide to eat themnot that they'll last that long. Because these cookies are so irresistible, the entire batch is usually eaten within a day.
Butterscotch Oatmeal Cookie Ingredients
cup Butter, softened
cup Granulated Sugar
1 cup Light Brown Sugar
2 Eggs
1 tsp Vanilla Extract
1 cups Bobs Red Mill Unbleached White All-Purpose Flour
1 tsp Baking Soda
tsp Kosher Salt
3 cups Bobs Red Mill Old ashioned Rolled Oats
1 cups Butterscotch Chips (about 11 oz)
Step-by-Step Instructions
Preheat the oven to 350F.
Beat the butter in a large bowl until smooth fluffy. This will take about 2 minutes.
Add sugars and continue beating until the entire mixture is light and fluffy, 4-5 minutes.
Add eggs and vanilla and beat until it's smooth again.
In a separate bowl, whisk together all dry ingredients except the butterscotch chips. Gradually add the dry mixture to the wet mixture and stir until it's thoroughly combined.
Add the butterscotch chips and stir again.
Line a baking sheet with parchment paper or a silicone liner and scoop tablespoon-sized cookie dough balls onto it.
Bake the cookies for about 9 minutes, until lightly browned.
Cool for 10 minutes.
When cookies are firm enough, transfer them to a wire cooling rack and enjoy.
