First step of this recipe is to whisk together your flax eggs. Combine our
Organic Golden Flaxseed Meal and warm water and let sit for about 5 minutes. The flaxseed meal will absorb the water and become viscous and thick. In baking, eggs act as a binder and the natural powers of flax make them the perfect replacement. In addition to using
flax eggs in waffles, you can use them in cookies, muffins, pancakes, etc! It's a great trick to remember when you run out of eggs.
While the flaxseed meal is working its magic, whisk together warm cashew milk (feel free to sub in your favorite milk here too), melted vegan butter, sugar, salt, vanilla and
yeast. The warm milk and sugar will wake up the yeast and encourage activity. Add in the prepared flax eggs, the
Gluten Free 1-to-1 Baking Flour, baking powder, and cinnamon. Cover bowl with a towel and let it rest in a warm place for 1 hour. This is the perfect time to sip your morning cup of coffee, catch up on the news, or if you're me - take the dog for a walk!

- Prepare flax eggs: whisk together flaxseed meal and water. Let sit for 5 minutes.
- Meanwhile, in a large bowl combine warm milk, butter, sugar, salt, vanilla and yeast.
- After 5 minutes, whisk flax eggs, flour, baking powder and cinnamon into milk mixture.
- Cover loosely with kitchen towel and rest for 1 hour.
- Heat and prepare waffle iron with light oil mist.
- Stir batter a few times to smooth out mixture.
- Pour 1/2 cup of batter into center of iron and bake for 5-6 minutes until golden brown.
- Remove from iron and serve immediately or store in 200F oven on wire rack.
