Well, it's that time of year again . . . school time. Life has gotten busy and my main task is to make things as easy as possible on our family. This Gluten Free Vanilla Protein Baked Oatmeal is perfect for those super fast mornings when the family needs a wholesome breakfast, but you have no time to prepare one in the morning. Having a stash of these babies in the fridge really eases up the craziness on weekdays, trust me. My boys love getting creative with their toppings because really, there is no limit with these. They will load them up with peanut butter, or syrup and bananas. Im a simple girl most mornings and opt for a little fruit with mine. This baked oatmeal is loaded with whole grain goodness and the addition of the vanilla protein powder gives it a great protein boost too! Its delicious room temperature or you can serve it warmed up. I dont make these too sweet since we do top them, so if you like your baked oatmeal sweeter, you should add a little sweetener of your choice. I hope you enjoy these as much as we do!

Vanilla Baked Oatmeal

Makes 3 small servings Preheat oven to 350F. Spray medium ramekins with cooking spray. Combine the oats, protein powder, baking powder and salt in a bowl. Next add the egg whites and water. Mix well to combine. Allow to sit for 5 minutes. Evenly distribute the batter into the prepared dishes. Bake for 30 minutes or until golden brown.
