Confession, I LOVE garbanzo bean flour. It's one of my all time favorite flours. Not only is it delicious, but it's high in protein and fiber, which makes my healthy heart ridiculously happy. Let's talk about pancakes. I love love love pancakes. Though, I know I'm probably preaching to the choir since I know I'm not alone here in my pancake love. I have to say that if you haven't tried savory pancakes, you should! Don't get me wrong, I love the sweet stuff sometimes, but savory pancakes are my go to every time. These savory pancakes are so easy to make with minimal ingredients and a quick cook time. So, fluffy mouthwatering deliciousness can be yours in just a few short minutes. I did a his and hers version for this round of pancakes. My husband got the royal treatment of roasted poblano peppers, bacon, cheddar cheese, fresh farmer's market tomatoes, and an over easy egg on top. I went with the vegan version of roasted poblano peppers, those juicy farmer's market tomatoes and fresh parsley. MMMMmmmmm! I will say this recipe works better in small batches since the baking powder reacts with the vinegar to create a super fluffy pancake. I've made them in batches before and it works perfectly. Antoher great thing about this recipe, is that you can easily make them sweet by slathering them with butter and your favorite syrup! Tell us, what are your favorite toppings for pancakes? Gluten Free Savory Pancakes

makes 6 small pancakes
  • 1/2 cup Garbanzo Bean Flour
  • 1 TBSP Baking Powder
  • 2 TBSP Rice Vinegar
  • 1/4 cup Water
Heat a nonstick skillet on medium heat. In a mixing bowl, combine the garbanzo bean flour with the baking powder. Next add the rice vinegar and water to the flour mixture; whisk until combined. The mixture will foam. Pour or scoop the batter into the heated pan. When you see the edges start to set (about 2 minutes), flip and cook an additional 2 minutes. Serve warm with your favorite topings.
