Curried Potato Nuggets Recipe

Recreate all of the mouthwatering flavors of vegetable curry in a bite-sized treat. This flavor-filled recipe is best served as an appetizer or savory dinner side. This recipe makes four servings of curried potato nuggets.

Nugget Ingredients

  • 2 tsp Oil (10 mL)
  • cup minced Yellow Onion (40 g)
  • 2 tsp grated Ginger (12 g)
  • 2 tsp finely minced Garlic (12 g)
  • 2 tsp Curry Powder (12 g)
  • tsp Salt (3 g)
  • 1 cups Water (360 mL)
  • cup frozen Green Peas and Diced Carrots (65 g)
  • 2-2 cups Potato Flakes (180-225 g)
  • cup Unbleached White All-Purpose Flour (60 g)
  • 2 cups Panko Breadcrumbs (120 g )
  • 2 Eggs (100 g )

Mango Sweet and Sour Sauce Ingredients

  • cup diced Mango, fresh or frozen (85 g)
  • 1 Tbsp Sugar (15 g)
  • 3 Tbsp Rice Vinegar (45 mL)
  • 2 Tbsp Ketchup (30 mL)
  • 2 Tbsp Water (30 mL)
  • 2 Tbsp Worcestershire Sauce (30 mL) (use vegan Worcestershire for a vegetarian version)
  • cup finely minced Cilantro (10 g)

Instructions for Curried Potato Nuggets

  1. Prep a baking sheet with parchment paper and set to the side.
  2. Add oil to a saucepan and cook over low heat.
  3. Add onion and cook it until it is soft and translucenta process that will take about 10 minutes.
  4. Add ginger, garlic and curry powder into the saucepan and cook until fragrant. (about 1 minute)
  5. Add water, salt, peas and carrots to the mixture and bring the water to a boil.
  6. Once boiling, turn off the stove and remove the pan from the heat.
  7. Stir in potato flakes and gently fluff with a fork until theyve combined with the other ingredients. Allow the mixture to cool off so that it can be safely worked by hand.
  8. Line a small sheet tray with plastic wrap and pack the potato mixture into an 8 x 8-inch square.
  9. Cover and refrigerate for at least 30 minutes and up to 12 hours.
  10. Once chilled, cut the square into 24 pieces and set the pieces aside.
  11. Preheat the oven to 450F. Add flour and breadcrumbs separately into two small bowls. In a third bowl, whisk the eggs.
  12. Begin to coat each nugget in flour, then egg, then breadcrumbs.
  13. Place the coated nuggets onto the prepared baking sheet. Spray the top and bottom of the nuggets with cooking oil and bake for 20 minutes. Flip each nugget halfway through the cooking process.
  14. Serve with ketchup or homemade Mango Sweet and Sour Sauce.

Instructions for Mango Sweet and Sour Sauce

  1. Process all ingredients in a blender or small food processor. Serve with nuggets.
