Bob's Red Mill finely ground, 100% stone ground Barley Flour is freshly milled on cool and slow turning, century-old stone-buhr millstones. It contains all of the barley kernel's healthy and natural elements‚ the germ, endosperm and bran. Barley Flour is an extraordinary addition for any baked goods. Barley flour is a good source of dietary fiber. Studies have shown that dietary fiber, specifically soluble fiber, can aid in the reduction of cholesterol. Barley contains a special type of fiber that is especially good for the reduction of cholesterol called beta-glucan. Beta-glucans also aid in the support of the immune system and can help regulate blood sugar. Barley flour has a sweet, nut-like flavor and may be added to your favorite baked goods recipe for additional flavor and nutrition and a wonderfully tender texture. Try substituting 1/2 cup of barley flour in place of your regular flour in biscuits, pancakes, cookies, muffins and breads.

Life Saver
I love this flour-it is my kitchen staple. It allows me to work with "traditional" recipes with only slight tweaking (Barley has half the gluten of wheat flour). Once I add 2 tsp Psyllium husk fiber I can use as a cup-for-cup for wheat flours.

Barley flour
Good quality barley flour is an important component of my pancake mix and my diet in general, and Bob's Red Mill fits the bill nicely. I might also add that it is difficult to find barley flour at grocery stores.

Nice subtle flavor
I needed this flour for traditional Scottish Bannocks (found in a book friends brought me from Scotland); I've made these twice and they're very good, with a slightly "different" flavor. I used this flour also for "Soft Barley Sugar Cookies" from King Arthur Flour's "Whole Grain Baking" cookbook. These are truly excellent cookies, with a crispy exterior and soft interior, and an intriguing delicate flavor.

My husband is diabetic, and he has good tolerance for barley. I'm hoping he also has good tolerance for barley flour. I've also read that since barley contains gluten, it's a better swap in recipes when one is trying to not cook with white flour.

This is a difficult type of flour to find. I had several recipes calling for bulgur. If used in moderation it can bring a different texture and flavor to any other recipe as well. Good flavor!

BEST ANSWER: Barley Brownies
1 cup Brown Sugar
6 TBSP Cocoa
1/2 cup Oil
1 tsp vanilla
2 Eggs
3/4 cup Bob's Red Mill Barley Flour
3/4 tsp Salt
1/2 tsp Baking Powder
1/2-1 cup chopped Nuts

Mix sugar, cocoa, oil, vanilla and eggs together until well blended. Stir in barley flour, salt and baking powder. Add nuts. Put mixture into an 8"x8"x2" greased pan. Bake in 350 degree oven for 30-35 minutes. Makes 16 brownies.
