Vital Wheat Gluten is the natural protein found in wheat. A small amount added to yeast bread recipes improves the texture and elasticity of the dough. Vital Wheat Gluten can also be used to make a vegetarian meat substitute known as seitan.

Details

Bob's Red Mill Vital Wheat Gluten is made from the protein found in the endosperm of the wheat berry, containing 75% to 80% protein. When combined with water it becomes highly elastic and has a taffy-like texture. A small amount added to yeast bread recipes improves the texture and elasticity of the dough, helps retain the gas and steam from baking, and gives more volume to the baked bread. It can be especially helpful for baking breads made with whole grain flours and coarse cereals. Vital wheat gluten is often used by commercial bakeries to produce light textured breads, and can easily put the home bread baker on a par with the professionals.

Vital wheat gluten is also a staple ingredient for meat and meat substitutes. It acts as a binder for meatballs, meatloaf, veggie burgers and tofu alike. Vital wheat gluten is the main ingredient in the popular meat substitute, seitan. To make seitan, mix vital wheat gluten with spices and then add water to make a dough. When the gluten dough is steamed, baked, boiled, or otherwise cooked, it becomes chewy with a very meat-like texture. I've started experimenting with making many different seitans Compared against eight other suppliers (including shipping and also my local carriers), this was the cheapest way to buy it. Making seitans and breads on a whim have been much easier since buying here in bulk.

Makes great whole wheat bread
For years I could not get my whole wheat bread to rise properly no matter what I did. Then a friend suggested I try Vital Wheat Gluten. What a difference! Now my whole wheat bread rises like it should, and it is so much healthier than white bread!

VWG increases looser crumb structure
This is good stuff. While I am not done experimenting with it, so far it works to give my 300 g French baguettes a better (more open) crumb than without it. Current testing bakers % is 2. 1% was not enough.

I'm so excited to find that I can get gluten from Bob's Red Mill directly - it's cheaper here than on Amazon and it will get to me faster! I make a lot of breads out of wheat that I grind myself from our farmer friend and the extra gluten makes it SO much lighter and fluffier.

When I make whole wheat bread, I get a better loaf with Red Mill Vital Gluten because it helps the bread rise and it is easier to digest. I've tried other glutens, but the breads did not rise much and the texture was too compact.

I make homemade sourdough using Bob's Red Mill Organic Whole Wheat flour as my starter base and both their Artisan Bread & Ivory Whole Wheat as my dry ingredients. By adding their Vital Wheat Gluten my sourdough ends up rising better, being chewier and tastes great. Everyone loves my sourdough and it is healthier than anything you can get in a store.

Vital Wheat Gluten keeps whole grain breads from falling. Most recipes I have found call for one half whole grain and one half bread flour. I have developed my own recipe where I use 3 cups of several whole grain flours and one cup of bread flour. I use 3 T of vital gluten and my bread turns out perfect every time.

I noticed that in my local supermarket, the package reads "Vital Wheat Gluten Flour" and the package on the website does not say "Flour" it just says "Vital Wheat Gluten" ---- is this the same product, or is there a difference?

Will Vital gluten keep longer if I put it in the freezer?. I want to buy 4 bags and want to be sure they will keep.

BEST ANSWER: Yes, you can store the Vital Wheat Gluten in an air-tight container in the freezer. The product has an 18 month shelf life and keeping in the freezer will extend this shelf life by about 6 months.
