Vital Wheat Gluten is the natural protein found in wheat. A small amount added to yeast bread recipes improves the texture and elasticity of the dough. Vital Wheat Gluten can also be used to make a vegetarian meat substitute known as seitan.

Details

Bob's Red Mill Vital Wheat Gluten is made from the protein found in the endosperm of the wheat berry, containing 75% to 80% protein. When combined with water it becomes highly elastic and has a taffy-like texture. A small amount added to yeast bread recipes improves the texture and elasticity of the dough, helps retain the gas and steam from baking, and gives more volume to the baked bread. It can be especially helpful for baking breads made with whole grain flours and coarse cereals. Vital wheat gluten is often used by commercial bakeries to produce light textured breads, and can easily put the home bread baker on a par with the professionals.

Vital wheat gluten is also a staple ingredient for meat and meat substitutes. It acts as a binder for meatballs, meatloaf, veggie burgers and tofu alike. Vital wheat gluten is the main ingredient in the popular meat substitute, seitan. To make seitan, mix vital wheat gluten with spices and then add water to make a dough. When the gluten dough is steamed, baked, boiled, or otherwise cooked, it becomes chewy with a very meat-like texture. Excellent meat substitute!
This product makes it so much easier to be vegan. We are still experimenting with all the different ways to make seitan but so far we love this addition to our diet. Very easy to prepare and it’s much cheaper and healthier than animal flesh. It adds variety to our diet.

I use this to add to some other mixes, such as the Atkins baking mix recipe. This is a great product and I have never been disappointed with it. I also use to make a French bread like dough in the bread machine, and it makes for a great loaf.

My wife and I decided to start eating a vegan diet. So I have been making a bunch of fake meat recipes using your vital wheat gluten and seitan recipes. I didn't like only being able to buy 22 ounce package from the store. A 3-5lb option would be nice. similar to your other flours which we buy. On a side note I buy all my flours (chickpea, wheat etc), Legumes, and thickeners like xanthan gum from you guys. We love your products and love that you are a PNW company. I like keeping my money local.

When I make whole wheat bread, I get a better loaf with Red Mill Vital Gluten because it helps the bread rise and it is easier to digest. I've tried other glutens, but the breads did not rise much and the texture was too compact.

BEST ANSWER: No, this is not a gluten free product. Vital Wheat Gluten is the concentrated gluten from wheat berries.
I noticed that in my local supermarket, the package reads "Vital Wheat Gluten Flour" and the package on the website does not say "Flour" it just says "Vital Wheat Gluten" ---- is this the same product, or is there a difference?

BEST ANSWER: Yes, you can store the Vital Wheat Gluten in an air-tight container in the freezer. The product has an 18 month shelf life and keeping in the freezer will extend this shelf life by about 6 months.
