For the best pie crusts EVER!
This is the flour I use to make my pie crusts. It is FANTASTIC! Unfortunately I can't find white pastry of any kind in the Dallas area where we have lived the last 10 years, so I am very happy I can mail order it--and at reasonable prices.

Where have you been all my life?
I've been baking for about 45 years and once operated a small retail bakery. This stuff is great! Total success with biscuits, scones, drop cookies, bar cookies, pie crust, waffles, pancakes, brownies, aebleskiver, potato rolls, pastries. Tip: it measures a lot more like cake flour than all-purpose and absorbs less water, so you may want to adjust some recipes slightly..

I was visiting my son and his family in Chicago last week and wanted to make some scones for my pregnant daughter-in-law. Lo and behold, there was only whole wheat flour.
Ended making a trip to the a food emporium, (literally), and discovered this Bob’s Red Mill product. I use lots of other Bob’s products and am an inveterate cookie baker. Let me just say, I will never use another flour in my baking, unless specifically called for. Simply the best.

I love baking with this pastry flour. It's my secret ingredient, in my scratched baked goods, that gives it that quality taste, texture and flavor. I had to use regular store brand AP flour when I ran out of the pastry flour, you could taste the difference & was not happy how they turned out. BEST ANSWER: Yes but make sure the cake flour in the recipe does not have added ingredients like baking powder or baking soda
some add it some brands don't. If your recipe lists one that does you will have to add it in yourself because this fine pastry flour does not have those ingredients.
Im making a cream cheese crust for tarts. The recipe calls for 1 cup all purpose flour. If I use pastry flour instead, should I adjust the amount of flour?

BEST ANSWER: All purpose flour has a little higher protein content than pastry flour. That said, I always use pastry flour when making crusts. I produces a more delicate texture; sometimes all purpose flour can yield a tougher crust. Much depends on your crust recipe, of course, but i love the results I get with BRM pastry flour. No adjustment should be necessary for your crust recipe.
Is this "fine pastry flour" comparable to White Lily All-Purpose?

BEST ANSWER: "Comparable" depends on what you are trying to make. If you are making delicate products, like those listed on the Bob's Red Mill package (biscuits, cookies, muffins, etc.), you will be more satisfied with the pastry flour. However, if you are baking yeast breads, you probably will want a higher gluten content than pastry flour. All-purpose flour will have somewhat higher gluten and will work well enough, but a good bread flour will have even more gluten and may suit your use better. Also, the grind of this pastry flour is much finer than all-purpose, which aids in making more delicate products as well. By comparison, cake flour has even less gluten than pastry flour and is ground even finer.
