I am allergic to a synthetic preservative called Dodecyl Gallate which has about 15 different alliases. My mother bakes me my favorite cake twice a year and she wanted to make sure that it is preservative-free so that I can enjoy her cakes again. According to my research we think that Bob's Red Mill is free of this preservative. Many thanks to Bob's Red Mill!

BEST ANSWER: I’m a Novice Baker, and I’ve used Arthur Murray, and bobs, and if the recipe says sift the flour, I️ would definitely do that as it helps even uniform Mixing. Even when it doesn’t tell you to, it’s a good practice. It’s not an issue of the flour at all.
Why does the side of the bags show that the Fine Pastry Flour has lower protein content, but the info you have posted here shows the Cake Flour as having lower protein?
