I can't tell the difference
In getting away from gluten, I have tried several flours and this one is amazing. I can't tell the difference in the final products I have used this in. It is amazing how I can make family favorites and not have to worry about them no liking it.

I've used it before and I'm not able to find it in any stores in my area. Love love love the blueberry muffin recipe on the back of the bag! They literally melt in your mouth. Also a fan of the biscuits!

This is an almost foolproof baking flour to use as a substitute in my non-GF recipes. Muffins, banana bread, cookies, and cakes all turn out great. I have found that yeast bread results are less than satisfactory, as stated on the website.

My husband was diagnosed with Celiac disease 2 years ago. For Christmas a friend gave him an assortment of Bobs Red Mill products. For Easter I used the 1 to 1 flour and baked him a pound cake. My son in law also found out he was wheat intolerant. When they tried the cake they said it was as good as the original made with regular flour.

This is truly a 1 to 1 substitution for regular flour. Everything I have cooked with it comes out perfect and everyone loves it! No grainy texture. My family actually prefers the gluten free recipes now that I use this. I have a gluten sensitivity and I played around with several other kinds and they all had this very grainy texture. This flour doesn't have that.

The biscuit recipe on the back of the 1 for 1 flour bag produces a good tasting biscuit. However, they do not rise. Any suggestions?

BEST ANSWER: For 2 cups of flour, I use 1 Tbs of baking powder and 1/2 tsp baking soda. I also pat my dough out, fold it over onto itself, turn 1/4 turn and fold it over again. I do this twice, then gently! pat the dough to about 1" thickness. Using a 1.5" biscuit cutter, floured, cut them with one quick straight down movement and move to a parchment lined baking sheet. Keep them fairly close together, but not touching. Also, I bake them at 420 degrees F.
How well does this blend freeze? The 25 lb bag is quite tempting.

BEST ANSWER: This flour will freeze well. It can be stored in airtight containers for quite a long time, up to 6 months past the expiration date. I recommend bringing it to room temperature before using it in your recipes.
I love this flour, and I've notice that when using oil in my recipes , I have to reduce by at least half or else the end result will be heavy. That strategy works with my cupcake and red velvet cakes . However, with my carrot muffins, the rnc result is still too heavy. Any suggestions?

BEST ANSWER: I made a three layer carrot cake with this flour last week that had 1 and 1/2 cups of vegetable oil in the recipe. I did not have this problem. It came out perfect!
When would you use the GF Baking 1 to 1 versus the GF All Purpose Baking Flour?

BEST ANSWER: You can use either interchangeably as an all-purpose gluten free flour.....the only difference is in the taste/the ingredients. I prefer the texture of the GF all purpose, but if I don't want to be able to taste the garbanzo flour that is in that mixture, then I use the 1 to 1. If I were making something with chocolate (like a brownie) or banana bread...something with a strong flavour on it's own, then I would use the all purpose. If I want a lighter taste for pastry or biscuits or finer cookies, then I would choose the 1 to 1.

The name "Gluten Free 1:1 Baking Flour" confuses me. What does "1:1" mean? Am I supposed to use 1 part of this flour and 1 part something else for my gluten free baking?

BEST ANSWER: Hi! You can use this flour as a direct (100%) replacement for all purpose wheat flour in most recipes. The 1:1 ratio means one part of all purpose wheat flour would equal one part of our GF 1-to-1 Baking Flour.
Can this flour make yeast bread without a bread machine? I am trying it by mistake, and the dough is only barely rising.

BEST ANSWER: I think it makes wonderful yeast bread. I’ve never used a bread machine so I don’t have that experience to compare it to. One would always want to proof your yeast first. My dough has a consistency of a thick cake batter. I let it rise once in the bowl for about 45 min. Then it goes into the bread pan where you let it rise again -it should double in volume. Be gentle with it as you spoon the dough into the bread pan. Make sure you’re proofing room is a nice 80 degrees at least. It should be ready for the oven in about 45 min or less. Don’t let it rise in the bread pan to long. Have your oven ready. From my kitchen to yours,

BEST ANSWER: No. No gluten free bread substitute on the grocery shelves or else where is suitable for making actual “bread”. It is however wonderful for making quick breads, such as banana or pumpkin.

BEST ANSWER: I use it as the base ingredient for my pizza dough, but I also use several other Bob's Red Mill flours in my mix, including the gluten free all purpose flour. Plus I add flax seed since I prefer a "grainier" type of crust similar to whole wheat. I've been experimenting with my recipe for several years to be able to make a GF pizza crust that doesn't use eggs.
Can I use this for rolled out dumplings?

BEST ANSWER: I've never tried dropping this into boiling water to see how it will hold. Perhaps the All Purpose with xanthan gum added, along with whatever fat you intend to use to hold it together will work better. You need a fairly substantial flour dough, not just for rolling out, but also for their boil. Hope this helps.

BEST ANSWER: Yes. I use it for my sausage gravy, also enchilada sauce. I mix it with butter or margarine and make a smooth rue. I'll put some in my gravy blend it well and let it simmer to see how thick it becomes, before adding more.

BEST ANSWER: NO pasta, but I do make my own bread and spinach breakfast muffins. Works better than King Arthur's. Gluten Free at home is easy. It's eating in restaurants that's hard for me. Most grocery stores now have a GF section. But be careful you can gain weight on some of those things. Just eat veggie, fruit, protein, and dairy. Stick to GF oats and brown rice.

BEST ANSWER: Dear Diana,
In my few years of experimenting with baking gluten-free baking, I found that though the 1 to 1 Baking Flour has some rising agent in it, it was not enough. So I recommend starting with the blue bag of 1 to 1 Baking Flour, then either increase the baking powder by 1/2 tsp or dissolve maybe half of package of yeast to the recipe (remember to start the dry yeast on the opposite side of the bowl from salt, baking powder or baking soda). Or you can use the white, yellow or chocolate cake ready-to-mix Bob's Red Mill products.

BEST ANSWER: I have not, but if you normally would use all-purpose flour, I cannot see why this wouldn't work. For the muffins we make, it works almost exactly as our regular flour and the customers love them.
