Try an exciting new grain free treat! These Trail Mix Cookie Bars are made with our Cassava Flour. Our dream version of trail mix is full of chocolate chips, sweet dried cranberries and crunchy pecans, but the possibilities are endless. Peanuts, mini marshmallows, candy pieces or almonds are all great. Just limit your add-ins to 1 ½ cups total, and the recipe will be delicious.
Preheat the oven to 350°F. Spray an 8 x 8-inch baking pan with nonstick spray and line with parchment paper.
In a large bowl, whisk together softened butter and brown sugar until well combined and lightened in color. Add in the two whole eggs, egg yolk and vanilla extract, and mix together.
Sift in cassava flour, baking powder and salt, mixing until the flour just disappears into the mix. Add chocolate chips, dried cranberries and chopped pecans, holding back a small bit of each to sprinkle on top. Smooth thick batter into an even layer in the prepared pan, and sprinkle with remaining toppings.
Bake for 28-30 minutes, until golden brown and the cookie bars are slightly pulling away from the sides. Allow cookie bars to cool, then slice into 16 pieces.
