- 1/4 cup Steel Cut Oats or Organic Steel Cut Oats
- 3 Tbsp Medium Grind Cornmeal or Organic Medium Grind Cornmeal
- 2 tsp Salt
- 1-1/2 cups Whole Wheat Flour or Organic Whole Wheat Flour
- 1/4 cup Wheat Germ
- 3 Tbsp Vital Wheat Gluten
- 1-1/2 tsp Active Dry Yeast
- 2 Tbsp Blackstrap Molasses
- 3 Tbsp unsalted butter
- 1 cup Unbleached White All-Purpose Flour
- 1/2 cup Brown Rice Flour or Organic Brown Rice Flour
- 2 Tbsp Organic Brown Flaxseed Meal
- 2 Tbsp Cider Vinegar
- 3 Tbsp Honey
- 1-1/2 cups Water (boiling hot)
- 1 cup Organic Amaranth Flour
- 2 Tbsp Sweet Cream Buttermilk Powder
- 1 Tbsp Poppy Seeds

Instructions
- Place oats, cornmeal, molasses, honey, salt and butter in the pan of your bread machine. Pour boiling water over the mixture, stirring to prevent lumps. Let rest for 10 minutes. In a separate bowl, blend listed dry ingredients, omitting yeast. Add vinegar to liquid in the bread machine pan and stir. Top with flour mixture. Make a small well in the center and add yeast. Place pan in your bread machine and bake on machine’s Whole-Wheat setting (DO NOT use rapid Whole-Wheat, or unsatisfactory rise will result!). Remove promptly from pan when completed. Makes 1 loaf (13 slices).
