Ingredients

  • 2 Tbsp Olive Oil
  • 16 oz Italian Sausage sliced
  • 6 cups Chicken Broth
  • 2/3 cup Steel Cut Oats or Organic Steel Cut Oats
  • 1 cup Onion diced
  • 1 cup Celery diced
  • 1 cup Carrots diced
  • 1 cup Leeks sliced
  • 4 cups Cabbage shredded
  • 2 Garlic cloves, minced
  • 2 Tbsp Rosemary minced
  • 2 tsp Seasoning Salt
  • 1/4 tsp Tabasco Sauce

Instructions

  1. Pour olive oil into a large kettle or dutch oven and heat over medium heat. Brown sausage, then add the chicken broth. When mixture comes to a boil, stir in the remaining ingredients. Reduce heat to simmer and cook for at least 20 minutes.
  2. Serve in bowls. I like mine with grated Asiago cheese and minced fresh parsley. Breakfast, lunch or dinner, it is sure to please.



    Serves 8.
