Garbanzo Beans (also called chickpeas) have a nutty, rich flavor and maintain their shape well after cooking. They are traditionally used to make hummus. Try adding to your favorite tossed green salad or soups and stews.

Details

Garbanzo beans (also called chickpeas or ceci beans) were first cultivated in the Middle East around 7,000 years ago. This popular legume spread from the Mediterranean basin and found its way to India and Ethiopia. Today, the garbanzo bean remains a staple of the Mediterranean, India, and the Middle East providing protein and a "meaty" texture to soups and salads. These round, irregular-shaped, cream-colored beans have a firm texture and a mild, nutty flavor. They maintain their shape well after cooking.

Garbanzo beans are a good source of fiber, protein and iron. Eat garbanzo beans with whole grains for vegetarian complete protein that's comparable to meat or dairy products, without the saturated fat or cholesterol.

Garbanzo beans are easy to include in a variety of recipes because they have a mild, subtle taste that pairs well with many other ingredients. Use garbanzo beans to make the traditional Middle Eastern favorites like hummus and falafel. They also make wonderful bean curries and dals. For a little variety, add garbanzo beans to chili, or process in a food processor and use as a meat extender or substitute for ground beef in tacos, pasta sauce, meatballs or meatloaf. Try mashed garbanzo beans in place of tuna fish for a vegan "mock tuna salad" sandwich. Garbanzos are a great addition to casseroles, salads and soups because they add protein and fiber without any fat. Roasted garbanzo beans make a fantastic and healthy snack. Toss them with a little olive oil, sprinkle with salt and pepper and then bake until crisp.

Excellent - so much better than canned!
With just a night soaking in water, these garbanzo beans result in a FAR SUPERIOR hummus. If you love hummus like I do, these beans are a must if you want to take your taste buds to a new level! Yummy!

Bob's Red Mill garbanzo beans are such a good quality, I don't mind the extra time it takes to cook them (compared with canned beans). I recommend cooking a large batch and save the extra in the freezer (after the beans are well dried); they freeze and reheat very well.
The beans are full of flavor and are great both in warm dishes or simply cold on salads.
I soak them overnight and I get firm but well cooked beans just with 1 hour of simmer. I might add an extra half hour if I need them extra soft for mashing them (for hummus or veggie burgers for example).

To make hummus (after soaking). While I have never made hummus, I do often buy it from the store.

I expect these beans are healthier (and better quality) than the canned version. They are likely cheaper, though I did not compare prices.

Garbanzo beans are one of my favorites beans, they are a good base for salad, soup or stew. As any bean, their content in protein is high, making a good substitute for meat and fish. Compare to grains, they have a higher content of various nutrients, making a good substitute for grains as well.
Although they are readily available in cans, they taste much better if you cook them from scratch. It is easy, and just a matter of getting organized.

Garbanzo Beans really help fill in gaps when I need something interesting to eat. They can be sprouted, roasted, soaked overnight and put into long cooking soups and stews. They can be soaked overnight and then cooked until tender and turned into hummus or other blends, added to bread mixes... just a very useful bean.
